Asian Seafood Soup

This dish contains Prawns, Mackeral and Salmon. These seafoods contain lots of omega 3’s and oils that are vital for a healthy and positive mind and are good for the memory and brain.
Mixed in with it are Pak Choi and Choi Sum, both deliciously healthy Asian vegetables and greens, and some baby potatoes.
Pak Choi or Bok Choi is also brilliant for weight loss and contains tons of the vitamins A, C and K.
Its a perfect vegetable for repairing tired muscles and joints, therefore was a perfect dish for a post intense training session last Thursday. It also helps maintain strong teeth and bones because it also contains lots of good calciums.
Pak Choi also helps reduce your risk of developing cateracs later in life and helps us see in the dark better and helps us maintain healthy eyes.
Finally, it is a vegetable than is alleged to help reduce your risks of some forms of cancers and also reducing the risk of developing Alzheimers disease.
All brewed in with a Tomato and Basil broth with Coriander added towards the end.
Its was Mental Health Awareness week last week and Cooking is very therapeutic for me personally.

The following was enough for 2 meals. Half the ingredients just for one sitting
308g Baby Potatoes ( 228 Calories, 0g Fat, 48g Carbs, 6g Protein)
200g Pak Choi ( 44 Calories, 2g Fat, 4g Carbs, 4g Protein)
100g Choi Sum ( 17 Calories, 0g Fat, 1g Carbs, 1g Protein)
190g Seafood Mix ( 110 Calories, 2g Fat, 1g Carbs, 21g Protein)
125g Frozen Prawns ( 76 Calories, 1.25g Fat, 0g Carbs, 17.5g Protein)
75g Coriander ( 23 Calories, 1g Fat, 4g Carbs, 2g Protein)
1 jar Lloyd Grossman Tomato and Basil Pasta Sauce ( 107 Calories, 6g Fat, 10g Carbs, 3g Protein)
1) Chop the baby Potatoes in half and boil them until softened. Meanwhile, finely chop the Pak Choi and Choi Sum.
2) Drain the Potatoes, then add the Jar of Tomato and Basil sauce along with about 250ml of water
3) Add the Prawns, seafood mix, Pak Choi And Choi sum and continue simmering for approximately another 15 to 20 minutes, to allow all the flavours to blend together.
4) Add some of the Coriander whilst simmering and garnish the rest when cooked.
5) Serve with seeded brown crusty bread.
