Absolutely delicious Mexican dish.

After training it is a brilliant mixture.

Lots of protein in the Chicken to rebuild the muscles after a brilliant training session.

Mashing Avocado to use as the Guacamole is much healthier for you and not much different.
.
The guacamole they sell in the shops contains lots of unhealthy food flavourings and additives.
.
By making your own mashing guacamole is much, much healthier for us. Avocado contains lots of healthy fats and also contains up to 20 different healthy vitamins and minerals, including phytonutrients.
.
It is also a good source of folate which contributes towards a healthy brain functioning. Consequently, avocado is a fantastic and important fruit for pregnant women as it can reduce the chances of any birth defects. Also, it contains lots of firbres which can be important in combatting or reducing our risks of developing any chronic diseases.
.
And absolutely tons of goodness in the Onion, Pepper, Garlic, Sweetcorn and especially the Coriander herb. Lots of Vitamins and Irons in this dish.

Finally, obviously tons of Carbs from the Tortillas in order to re-fuel the glucose tank after such a great session.

And only 10g of Sugar in the whole dish so it is a LOW GI (low sugar meal). The less Sugar Athletes eat in our diet the more it helps performance and improves endurance and recovery, whilst also enabling you to lose body fat much easier and quicker.

1 Red Onion ( 28 Calories, 1g Fat, 5g Carbs, 2g Protein)

1 Red Pepper ( 30 Calories, 0g Fat, 7g Carbs, 1g Protein)
.
1 Chilli ( 0 Calories, 0g Fat, 0g Carbs, 0g Protein)
.
1 clove Garlic ( 3 Calories, 0g Fat, 1g Carbs, 0g Protein)
.
1 Avocado ( 191 Calories, 20g Fat, 2g Carbs, 2g Protein)
.
2 Chicken Breasts ( 270 Calories, 2g Fat, 0g Carbs, 24g Protein)

1 Tin Refried Beans ( 47 Calories, 0g Fat, 0g Carbs, 0g Protein)

1 Tin Sweetcorn ( 80 Calories, 2g Fat, 12g Carbs, 3g Protein)

1 Tin Chopped Tomatoes ( 23 Calories, 0g Fat, 4g Carbs, 1g Protein)

Handful of Coriander ( 23 Calories, 1g Fat, 4g Carbs, 2g Protein)

Old El Paso BBQ seasoning ( 15 Calories, 0g Fat, 2g Carbs, 0g Protein)

1) Chop a Red Onion, Red Pepper, ONE Chilli and crush one clove of garlic in to Wok and then add 2tbsp of Sunflower Oil
.
2) Chop the Chicken breasts in to small squares and add to a seperate wok.
.
3) Mash up one Avocado ready to use as the Guacamole in the Encheladas.
.
3) Cook the Veg for 10 minutes and the Chicken simultaneously. Then add the Chicken to the Veg once cooked and continue cooking for few more minutes in order to let Veg soak up Chicken juices too.
.
4) Add tin of Refried Beans, Sweetcorn, Chopped Tomatoes, Old El Paso Spicy BBQ seasoning and a handful of Coriander and cook for another few minutes. Meanwhile; heat the oven to Gas mark 6 or 200C (180 in a fan oven)
.
5) Lay the Tortillas on a wooden board. Divide the sauce between the Tortillas, then top with the Avocado and Sour Cream. Sprinkle grated cheese on top.
.
6) Bake in the oven for 20-30 minutes until Encheladas are light brown and crispy.
.
7) Serve with a Side Salad.
