Lentils are very high in protein and also contain 1/3 or your iron content that you should be eating in a day.
They are also high in Calcium, over 30g of it to precise and also contain lots of good magnesium. So tons of goodness in them perfect for exercise recovery.
Mushrooms are high in Vitamins and low in fat and calories whilst the Onion has a little carbs and protein but is low in Calories.
200g Red Lentils ( 172 Calories, 2g Fat, 20g Carbs, 16g Protein)
100g Mushrooms ( 13 Calories, 1g Fat, 0g Carbs, 2g Protein)
1 Onion ( 31 Calories, 0g Fat, 6g Carbs, 1g Protein)
100ml Chicken Stock granules mixed with Water ( 34 Calories, 0g Fat, 0g Carbs, 0g Protein)
1/2 pack Coriander
1) Put the Red Lentils in to a saucepan and cover with Water and bring to the boil.
2) Add the Mushrooms And Chicken Stock and simmer for 20-25 minutes.
3) Halfway through add the thinly chopped Onion and half of the Coriander.
4) When finished cooking add the rest of the Coriander.
5) Serve with a crusty roll
