Chickpea Salad with Avocado Salsa

This salad is a tremendous source of plant based fibre, protein but also plant based fats, which contain the healthy fats so vital for competition and exercise.

Avocado is high in monounsaturated fats and these help maintain a good blood cholesterol.

This salad provides you with 7 different portions of fruit and vegetables and the Chickpeas also help boost the carbohydrate content too.

I have also added nuts to my salad as nuts are very good for us indeed, they help promote and contribute to a healthier memory and brain.

In this Salad you are getting literally a little of everything, and after yesterday’s long run the Spinach leaves provide you with a very good amount of Iron.

And my legs do feel so much better in just 24 hours.

 

For the Salad

1 Courgette, peeled in to strips ( 20 Calories, 0g Fat, 2g Carbs, 2g Protein)

Half a cucumber, finely chopped ( 6 Calories, 0g Fat, 2g Carbs, 1g Protein)

1/2 Onion, finely diced ( 25.5 Calories, 0.5g Fat, 4.5g Carbs, 1g Protein)

400g tin Chickpeas ( 153 Calories, 4g Fat, 19g Carbs, 9g Protein)

2 tomatoes, chopped ( 18 Calories, 0g Fat, 3g Carbs, 1g Protein)

50g Spinach leaves ( 14.5 Calories, 0.5g Fat, 2g Carbs, 1.5g Protein)

1 small pack mixed nuts ( 156 Calories, 14g Fat, 2g Carbs, 5g Protein)

1/2 orange, squeezed ( 31 Calories, 0g Fat, 7.5g Carbs, 0.5g Protein)

1 tbsp olive oil ( 120 Calories, 14g Fat, 0g Carbs, 0g Protein)

 

For the Salsa

1 Avocado, mashed ( 240 Calories, 24g Fat, 2g Carbs, 2g Protein)

1 tbsp Olive oil ( 120 Calories, 14g Fat, 0g Carbs, 0g Protein)

1/2 Onion, finely diced ( 25.5 Calories, 0.5g Fat, 4.5g Carbs, 1g Protein)

1 red chilli, finely diced ( 4 Calories, 0g Fat, 0g Carbs, 0g Protein)

2 tbsp olive oil ( 240 Calories, 28g Fat, 0g Carbs, 0g Protein)

 

1) Put the cucumber in to a deep salad bowl. Add the squeezed orange juice and the nuts.

2) Then Add the tomato, half the diced onion and Chickpeas and mix everything well.

3) Then Add the Spinach leaves and tablespoon of olive oil and then mix everything thoroughly together once more.

4) Peel the Courgette in to long thin strips and set aside ready. Then finely dice the red chilli, de-seeding it.

5) To make the avocado salsa, slice the avocado and put it in a large mixing bowl. Mash the avocado well and then add the olive oil, diced chilli and the other half of the diced onion.

6) Transfer the avocado salsa in to a bowl.

7) Arrange the strips of Courgette in to a neat mountain on the plate. Serve the Salad nicely on top of and around the Courgette.

8) Serve accompanied with the Avocado Salsa.
