I made this soup using a few odd ingredients lying around in my house.
And despite its simplicity to make, it was actually a very tasty and delicious soup that you can make quickly and have either before or after exercise and workout.
Pretty much full of fat but the key is that it is full of healthy fats.
Not the prettiest soup I have ever made, but on a day where I didn’t have much time to prepare or plan, it was quite a good little Soup to concoct just out of a couple of main ingredients.
1 Red Chilli, finely diced ( 4 Calories, 0g Fat, 0g Carbs, 0g Protein)
1 Avocado ( 240 Calories, 24g Fat, 2g Carbs, 2g Protein)
1 tbsp olive oil ( 120 Calories, 14g Fat, 0g Carbs, 0g Protein)
250ml Vegetable Stock ( 14 Calories, 0g Fat, 3g Carbs, 1g Protein)
3 tbsp Cornflour ( 54 Calories, 0g Fat, 0g Carbs, 0g Protein)
1) Fry the red chilli in the olive oil for a few minutes on a medium-high heat.
2) Add the avocado and mash all together with the chilli also.
3) Add the stock and bring to the boil. Simmer for a good few minutes to allow the avocado boiling to give a lovely green colour to the soup.
4) A couple of minutes before serving, add the cornflour to thicken the Soup up a bit.
