50g Self Raising Flour
1 tsp of baking powder
50g Greek Yoghurt
1 Onion, finely chopped
5 Cloves of garlic, grated
2 tbsp Avocado oil
50g Coriander, finely chopped
1 tbsp butter
200g Tin Chopped Tomatoes
100g Quorn Mince
6 Lasagne sheets
50g Spinach
25g Mozzarella Cheese
For the White Sauce
2 tbsp butter
100 ml skimmed milk
3 tbsp self raising flour

Vegan Alternative Recipe
50g Self Raising Flour
1 tsp of baking powder
25ml Coconut Milk
1 Onion, finely chopped
5 Cloves of garlic, grated
2 tbsp Avocado oil
50g Coriander, finely chopped
200g Tin Chopped Tomatoes
100g Quorn Mince
6 Lasagne sheets
50g Spinach
For the White Sauce
100 ml soya milk
3 tbsp self raising flour
For the Vegan option, simply replace the Greek Yoghurt with Coconut milk, the skimmed milk for the white sauce with soy and milk and then bake without any mozzarella cheese on top.
1) Mix the flour, baking powder and Greek yoghurt together in a large bowl until you create a dough. Knead the dough on a floured surface and then cut in half. Knead the two doughs again.
2) Grease a pan with a little avocado and then cook the mini garlic breads one by one for a few minutes each side.
3) In another pan, fry a tablespoon of butter on a high heat. Then when the butter has melted, take pan of the heat and grate 2 cloves of garlic and add that and the coriander to the butter. Spoon all this on to each flatbread for the last few minutes of cooking. Put the flatbreads on to a plate and set aside.
4) Fry the Quorn mince in a frying pan for about 5-6 minutes on a medium-high heat.
5) Meanwhile, fry the onion and garlic in a saucepan in a tbsp avocado oil until golden. Once golden, add 200g Chopped Tomatoes. Then add the tomato sauce mixture to the Quorn mince and mix all together well.
6) For the white sauce, melt the butter in a saucepan and then add the milk. Slowly add the flour bit by bit and keep stirring until the sauce is pretty thick.
7) Place 2 Lasagne sheets at the bottom, then layer as is traditional. Top with a good handful of mozzarella cheese and cook in the oven on about 180C for about 30 minutes.
8) Serve with a good handful of Spinach and the Garlic Bread.
