1) Drizzle the side of a Salad bowl with the Avocado oil. Add the kale and then mix well and thoroughly until all the kale is coated in the oil.
2) Next Add your Mediterranean salad mix along with the watermelon and pineapple and stir all together.
3) Add your yoghurt and pine nuts and then stir thoroughly again.
4) Top with the Parmesan shavings and then stir once more before serving.
