1 Onion, finely diced

- Fry the onion and garlic together In the olive oil on a medium heat for about 5 minutes until golden.
2. Next Add the vegetable stock with water and then add the very finely diced spinach leaves.
3. Bring to the boil for a few minutes and then add the chickpeas, mixed beans and celery and then simmer for about 5 minutes more.
4. Serve with the toasted Ciabatta.
