Spinach & Mixed Bean Soup

1 Onion, finely diced

3 garlic cloves, finely diced

100ml vegetable stock with water

150g Spinach

400g tinned Chickpeas

400g tinned mixed beans

3 celery sticks, finely diced

2 Ciabatta Rolls

  1. Fry the onion and garlic together In the olive oil on a medium heat for about 5 minutes until golden.

2. Next Add the vegetable stock with water and then add the very finely diced spinach leaves.

3. Bring to the boil for a few minutes and then add the chickpeas, mixed beans and celery and then simmer for about 5 minutes more.

4. Serve with the toasted Ciabatta.
