Parmesan and Lemon Spaghetti With Chorizo

175g Spaghetti

100g chorizo, finely chopped

50g Spinach

Juice of 1 lemon

25ml Single cream

3 tbsp Parmesan cheese

  1. Bring a large saucepan of salted boiling water to the boil. Cook the pasta for 8-10 minutes.

2. Fry the chorizo on a medium to low heat for a few minutes. Then add the spinach and continue cooking both together for a few more minutes whilst the spinach wilts.

3. For the sauce, mix the juice of a lemon, 25ml of cream and the Parmesan cheese an delicious mix and stir well.

4. Drain the pasta, add it to the sauce and mix everything thoroughly, then serve.
