
200g curly kale
4 tbsp olive oil
3 celery sticks, finely diced
50g baby carrots, boiled, drained and diced
3 tomatoes, finely diced
2 avocados, mashed
1 small strawberry yoghurt

- Put 1 tbsp of the olive oil in a salad bowl and then add the kale. Stir thoroughly until all the Kale is well coated in the oil.
2. Whilst mixing all the other vegetables with the kale, boil the carrots for 5 minutes, then drain, dice them and add them to your bowl.
3. For the Salad dressing, mix 2 mashed avocados with a strawberry yoghurt and 3 tablespoons olive oil. Add to the salad. Stir everything thoroughly together and then stir.
