Avocado 🥑 Carbonara

300g wholewheat Spaghetti

2 avocados

1 egg

2 tbsp olive oil

100g diced pancetta cubes

  1. Bring a large saucepan of boiling water to the boil and then cook your spaghetti according to packet instructions until al dente.

2. Meanwhile, fry you’re pancetta on a low to medium heat whilst your pasta cooks.

3. For the sauce, mash up 2 avocados in a bowl, crack one egg in to the bowl and add the olive oil and then stir all together thoroughly.

4. Drain your pasta and add to the pan with the pancetta. Add your avocado sauce, stir all together thoroughly and then serve. Top with parmesan cheese if you wish.
