Sweet Potato & Lentil Soup

4 small sweet potatoes, peeled and diced

1 onion shallot, diced

1 tbsp olive oil

400g chopped tomatoes

400g tinned green lentils

50g kale

2 Ciabatta Rolls

  1. Bring a large saucepan of boiling water to the boil and cook the sweet potato for about 15 minutes.

2. Meanwhile, fry the onion in a small frying pan in the oil ready.

3. When the potatoes are done, drain them and mash them with a little butter and milk until you have a creamy mash.

4. Add the tinned tomatoes, onion and lentils. Bring back to the boil and simmer for 5 minutes then ladle in to soup bowls and serve with the Ciabatta.
